Chinese black vinegar 1 tbsp

Step 1: Season and Marinate the Duck

Pat the duck completely dry with paper towels, inside and out. In a small bowl, mix together the light soy sauce, dark soy sauce, honey, Chinese black vinegar, Shaoxing rice wine, Chinese five-spice powder, salt, and sugar until the honey dissolves. Rub this mixture all over the duck — inside the cavity and all over the skin. Stuff the cavity with the garlic cloves, ginger slices, and scallions. Place the duck on a wire rack over a baking tray. Refrigerate uncovered for at least 2 hours, or overnight for best results. The longer it sits, the deeper the flavor and the crispier the skin.

Take the duck out of the fridge and let it sit at room temperature for 30 minutes. Preheat your oven to 200°C (400°F). Place the duck breast-side up on a wire rack in a roasting pan. This allows hot air to circulate all around the bird. Roast for 30 minutes at 200°C to start crisping the skin. Then reduce the temperature to 175°C (350°F) and continue roasting for another 60-75 minutes. Every 20 minutes, brush the duck with any remaining marinade juice from the baking tray. The duck is done when the skin is deep golden brown, slightly cracked, and the internal temperature of the thigh reaches 75°C (165°F). The total time should be around 90-105 minutes.

FAQ

Can I use duck breasts instead of a whole duck?
Yes! Use 4 duck breasts. Score the skin, season, and roast at 200°C for 25-30 minutes total, flipping once. Much faster and easier to manage.

Why isn't my skin crispy?
Two reasons: either the skin wasn't dry enough before roasting, or the oven temperature was too low. Make sure to pat the skin dry and use 200°C for the first 30 minutes.

Is the duck safe to eat when the skin looks slightly pink?
The skin can be pink near the bone and still be safe. As long as the internal temperature reaches 75°C (165°F), it's fully cooked.

What if I don't have a wire rack?
You can place the duck directly in the roasting pan breast-side up. The skin on the bottom won't be as crispy, but the rest will be fine.

Can I skip the overnight marinating?
